Quick, easy and delicious! 10min from flour to finish!

Out of nowhere one late afternoon/early evening my kids (2y + 4y) called me to the room and asked for cake... CAKE?! Where on earth was I going to magically find a cake at that time and I really didn't have it in me to spend over an hour baking a cake for them. So I put on my thinking cap and thought on my feet and whipped up this magical microwave cake! The actual cooking time is about 3-4min... I mean, WOW!! I was completely gobsmacked that it worked AND it was yummy!
10 min Microwave Cake
I N G R E D I E N T S
1 cup cake flour
1/2 cup sugar
1/2 cup melted butter
1 teaspoon baking powder
2 eggs
1 teaspoon vanilla essence
4 tablespoons of milk
2 heaped tablespoons of Milo (or 1 tablespoon of cocoa - it’s up to you, I chose milo)
TOPPING : you can make icing sugar, however I just used strawberry jam and it was delicious!
I N S T R U C T I O N S
Sieve flour and baking powder together and keep aside
Mix melted butter, sugar, eggs, vanilla essence, Milo(or cocoa) and milk and blend with a stick blender for 1 min (or whisk like crazy for 3min).
Add this mixture to the flour and baking powder and blend with stick blender for 1min (or whisk until your arm is lame for 3min)
Pour mixture into a greased microwave safe bowl (I used a silicone cake mold and greased it with spray and cook)
Bake in the microwave for 60sec intervals until cooked. As a guide - Mine took 3min30sec to cook. Yes , you read that correctly.
Cool, cut and serve!
