Banana Sourdough Crumble

We've all had that half eaten artisanal loaf that's too hard to eat and there's only so much toast you can eat. Introducing the breakfast treat of all treats.... Banana Sourdough Crumble!



Ingredients:

  • 3 cups of chopped up sourdough bread (or any artisanal bread)

  • 3 eggs

  • 1 cup of milk

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • 1 tablespoon brown sugar (and a little extra for topping)

  • 1 banana chopped up into little chunks.



Instructions:

  1. Preheat oven @200 degrees Celsius.

  2. Whisk together eggs, milk, cinnamon, brown sugar and vanilla extract.

  3. Fold in the chopped up bread and add the coated bread to greased baking dish (I use silicone Snackies from www.wemightbetiny.co.za) Keep any of the liquid mix aside for step 4.

  4. Top with chopped banana and pour any leftover egg mix over the top.

  5. Sprinkle with a little brown sugar and bake for 20min at 200 degrees Celsius.

If you're using a Snackie dish, you can pop the lid on and take your baked crumble on the go!
