Blueberry choc chip chia mini cupcakes

Who doesn't love a freshly baked treat to snack on?! Besides the warm deliciousness of oozy chocolate chips and the soft juiciness of baked blueberries, there is a super satisfying crunch from the chia seeds and the scent of your favourite bakery envelops the whole house!

Warning : Your neighbours will come knocking.


1 cup all purpose flour

1 tsp baking powder

2 tablespoons chia seeds

3 tablespoons brown sugar

1/4 tsp salt

3/4 cup blueberries

1 cup milk

2 eggs lightly beaten

2 teaspoons vanilla extract

1/3 cup chocolate drops


Preheat oven to 190 degrees Celsius.

Mix all the dry ingredients together.

Mix all the wet ingredients together.

Add wet mix to dry mix and fold until combined.

Spoon the batter into a greased mini muffin tin (24 mini muffin tray) and bake @190 degrees Celsius for 10min until lightly golden in colour.

Allow to cool and then run a knife around the rim of each mini muffin and pop them out to enjoy by the handful!
