Creamy Butternut Mac + Cheese

Creamy Butternut Mac + Cheese


I N G R E D I E N T S

  • 350g uncooked Elbow macaroni

  • 3TBS Unsalted Butter

  • 1tsp chopped Garlic

  • 3TBS all purpose flour

  • 3 cups milk (warm)

  • 150g grated cheddar cheese

  • 1cup butternut/pumpkin purée(see purée recipes)

  • 1 healthy serving of grated hard cheese like Parmesan

Seasoning:

  • 1tsp salt (or more to taste)

  • (OR salt can be left out if feeding 10-12m babies)

  • A pinch of ground black pepper (optional)

  • 1tsp nutmeg


I N S T R U C T I O N S


  1. Start cooking pasta in boiling salted water(according to packet instructions) in a pot and melt butter + garlic in a separate pan on medium-high heat until golden brown. Then add flour and 1 cup of warm milk and whisk until smooth and thickening starts.

  2. Add the remaining two cups of warm milk + grated cheddar + butternut/pumpkin puree + seasoning(salt/pepper/nutmeg) and continuously stir on high heat for 5min or until a silky pasta sauce comes together.

  3. Strain and add cooked pasta to the sauce + fold well with a spoon until pasta is evenly coated and dish up! Shave/grate a generous amount of hard cheese over the top just before serving :-)

This recipe yields 8-10 toddler meals / family of 4 (2 adults +2 kids)

Refrigeration : allow to cool for 15 min in a container covered with lid before putting into the fridge in an airtight container. Store for 3days

Freezing : allow to cool for 15 min in a container covered with lid before storing into the freezer in an airtight container. Store for 6weeks.
