NO WASTE LEFTOVER CRUNCHIES

I hate wasting food 🥺😫 and with toddlers in the house it feels like a lot of food ends up in the trash 🗑 So I decided to keep all the dried leftovers and make a crunchie granola bar recipe!

Here’s how you make them :


💥Collect the dry leftovers from snacks and lunch boxes throughout the week and store them in a sealed dry bag. I store things like biscuits/cookies, pretzels, rice cakes, cheese crackers, dried fruits, nuts and even added in a few left overs smarties from a party over the weekend.

💥Blend up leftovers along with 1.5 cups of oats and any other add-ins you like, I chose pitted prunes and half a cup of raisins. Pulse blend until you have a nice dry granola mix.

💥 heat up 1 cup of nut butter and 3/4 cup of honey and whisk until smooth. Take off the heat and whisk in 2TSP vanilla essence.

💥Add nut butter and honey to granola and mix well. The mixture shouldn’t be runny(if so, add more oats) or too dry(if so, add more nut butter and honey). Make sure your mixture can form a ball when rolled or pressed.

💥Press your mixture into a lined dish - compress it down hard and compact as possible.

💥Refrigerate for 1 hour and then cut into squares.

💥Store in an air tight container IN THE FRIDGE for up to 2weeks or individually wrap each crunchie bar and freeze for up to 3months.
