Nyummies Veggie Pasta Sauce

Delicious hidden vegetable pasta sauce - even the pickiest of kids will LOVE this veggie packed sauce. Who doesn't love a fuss free meal in 40min? And this one is packed with veggie goodness AND approved for the WHOLE family!

INGREDIENTS

  • 2 tbs of olive oil

  • 1 large onion, diced

  • 2 cloves of garlic, diced

  • 2 stalks of celery, chopped

  • 1 large carrot, chopped

  • 1 red bell pepper, chopped

  • 1 large baby marrow (zucchini), chopped

  • 1 tbs of chopped fresh basil

  • 1 tsp of oregano

  • 1 can (400ml) of no added salt chopped tomatoes

  • 2 tbs of tomato paste

  • 1 tbs of balsamic vinegar

  • 1 cup low sodium vegetable or chicken stock

  • salt and black pepper (to taste - can be left out)



INSTRUCTIONS

  1. Add olive to a deep saucepan or frying pan and heat over a medium high heat.

  2. Add the onion, garlic, celery and carrot and fry until softened.

  3. Add in the red pepper, zucchini, basil, oregano, can of chopped tomatoes, tomato paste and balsamic vinegar and 1/2 cup of stock.

  4. Bring to a boil and then simmer for 10 minutes.

  5. Add all ingredients to a blender(or use a stick blender) and blend until smooth or the texture you like, I like mine to be lumpy with some of the veggies still recognisable.

  6. Add back to the pan and add more stock until it meets your desired consistency/thickness.

  7. Taste and season

  8. Serve over pasta of your choice and enjoy!!!

You could also add cooked meat or meat alternatives to this sauce, such as :

  • beef strips

  • chopped up chicken

  • minced beef

  • tuna

  • bacon

  • lentils

  • tofu

  • portobello mushrooms
