Frozen Yoghurt Leftover Sandwiches

Think ice cream sandwich meets fro-yo! Your new favourite after dinner or summertime treat!

Makes: 8 fro-yo sandwiches

Prep Time : 20min

Freezer Time : 4hours+


INGREDIENTS

  • 1 cup peanut butter (or any nut butter)

  • 1/4 cup honey (or maple syrup)

  • 2 slightly heaped cups Nyummies Leftover Mix

  • 500ml yoghurt (I used strawberry lactose free yoghurt but any yoghurt of choice can be used)

INSTRUCTIONS

  1. Heat peanut butter and honey together in the microwave or on the stove top until runny and smooth and add to Nyummies Leftover Mix, combine well.

  2. Divide this mixture in two and spread thinly (about 1cm thick) onto greased or lined baking sheets, pressing down hard to make sure its compact and won't crumble.

  3. On one of your pressed out bases, spoon out the yoghurt filling.

  4. Place the two pressed bases (one with yoghurt, one without) into the freezer.

  5. Once frozen, place the one base on top of the yoghurt layer (like a lid or top of the sandwich) and press down to bond together and form one large sandwich.

  6. Using a sharp large knife, slice into 8 individual sandwiches.

Allow to stand at room temperature for 5-10min before serving to give the yoghurt some time to defrost a little for easy eating.
